![]() You may have noticed that much of the food at PuraVegan is either oil-free or low oil. Chef and owner, Monica, has been following the vegan oil-free lifestyle since 2007, when she decided to use nutrition to heal her chronic illnesses. She quickly noticed that back in 2007, it was nearly impossible to dine-out and omit oil. That has provided much of her drive and inspiration to operate PuraVegan Cafe. Oil is very calorically dense, containing 120 calories in a tablespoon. It is not uncommon for a typical restaurant salad to contain only 75 calories in vegetables, but 400+ calories from dressings and perhaps another 200 - 300 in cheese. Instead, we prefer to provide your healthy fats in whole food form using avocado, nuts, nut butters and seeds in place of oils. When you obtain fat calories from whole foods you also get the fiber, protein, and other nutrients that are not present in oil. We have many years of experience at preparing healthy oil-free food without sacrificing flavor. In January we are offering lots of cooking classes that will be 100% oil-free under our EAT MORE PLANTS health initiative. We will teach you how to prepare salad dressings, soups, and sauces that contain no oil at all and are very simple and affordable. We also offer many books by Dr Joel Fuhrman, that can help you get a better understanding of the benefits of reducing or omitting oil from your diet.
