1. HEALTHY Beans are high in fiber, lower in calories and fat, and keep you full for a long time. Beans are naturally high in resistant starch, preventing you from absorbing all the calories in beans. They also are high in fiber and cause a slower digestion time, keeping you full and satiated for longer. Beans are a preferred starch due to their low glycemic load and are helpful in both preventing and reversing Type 2 Diabetes.
2. AFFORDABLE Beans are widely available and range in cost from $0.25 to $0.75 per cup. To get the most bang for your buck buy dried beans and cook them yourself. Cooked beans freeze well, so you can cook up a bunch at one time and keep them in your freezer ready to use. Soak dried beans for approximately 12 hours, then drain and boil until soft. For a softer bean put a lid on your pot, for a firmer bean leave the lid off.
